Bainbridge’s Café Hitchcock transforms into Seabird, a new seafood restaurant

Throughout the pandemic, chef Brendan McGill’s Hitchcock restaurant on Bainbridge Island has gone through a number of interesting pivots, from a series of guest chefs who first brought Turkish pop-up Hamdi to Seattle, the return of the famous Burgerhaus burger restaurant for a while. Now, McGill is making a more permanent shift by closing Bainbridge’s Hitchcock restaurant after more than 10 years and transforming the Hitchcock space into Seabird, an inventive seafood and veg-focused fine-dining restaurant slated to open May 26. may.

“We live in an area revered for its abundance of seafood, and I want to celebrate that as we continue our efforts to help define our regional cuisine,” McGill said in a statement. “It’s also a good time to get back to more fine dining.”

Grant Rico, the executive chef of McGill’s Hitchcock Restaurant Group, will lead the Seabird’s kitchen and is a partner in the new venture.

The menu, which will change regularly depending on the ingredients available in season, offers all kinds of seafood, creatively prepared. A “frozen seafood” section features a rotating selection of local oysters as well as spot prawns, geoducks and green sea urchins. Other cold seafood dishes include yellowfin tuna tartare with duck yolk gel, mustard emulsion, poached leek and crostini, and chinook salmon crudo with beets, spring onion ash, black sesame and dulse seaweed.

Well-executed small plates fusing elements from different cuisines also appear on the opening menu: a uni “pain perdu” of brioche soaked in dashi cream and pickled spring onions, fromage blanc and chives, and a chawanmushi of Dungeness crab (Japanese steamed egg). pastry cream) with crab fat and dashi mousse. Large plates include a dish of wood-fired halibut with summer squash and black garlic mole and a giant Pacific octopus with carrot butter Hollandaise sauce, black lentils, carrots and kale.

The drinks menu will include an extensive wine list featuring organic and natural wines, and cocktails will include inventive ingredients like yuzu kosho and nitrogen blended herbs.

Seabird is located at 133 Winslow Way East, Bainbridge Island. Hours will be Thursday through Sunday, 5 p.m. to 9 p.m.
