Bosses at Michelin-starred Cail Bruich to launch new seafood restaurant Shucks in Hyndland

The owners of Michelin-starred Cail Bruich are opening a brand new seafood restaurant in Hyndland.

Shuck’s will serve fresh Scottish produce from its state-of-the-art kitchen as well as champagne and cocktails when it opens this spring.

The former Nick’s Neighborhood Bar on Hyndland Road is being transformed in a £250,000 refurbishment to include an 80-seat restaurant, bar and outdoor terrace.

The much-loved restaurant closed in January 2020, with patrons hinting at another venue in its place.

Epicures co-owners Paul and Chris Charalambous, Cail Bruich and Brett, announced the plans in partnership with lead hotel investor and itison founder Oli Norman, saying it will be a “one-of-a-kind dining experience.”

Chris said: “Shucks has been in the works for a long time and we are thrilled to finally be able to announce it to the Hyndland community.

“We hope Shucks will bring a unique dining experience to the area which will add to the already thriving hotel scene the West End has to offer. We are also proud to have created 30 sustainable jobs in the region and will continue to invest in our people and in the product to deliver first-class hospitality experiences.”

The seafood bar and restaurant will serve the finest produce from Scottish waters with dishes designed by chef Shaun Haggarty, which let the produce do the talking.

The kitchen team will use a range of techniques with house curing and smoking and fresh seafood cooked on a wood-fired grill.

Alongside the menu, a drinks program for diners and guests will take place in the elegant cocktail bar, wine bar and outdoor terrace on the ground floor.

The menu will include a champagne and cocktail cart brought to your table; a wine and champagne list by Cail Bruich’s head sommelier; and seasonal cocktails including the house Negroni served at your table.
