Con Huevos to open fourth breakfast restaurant in Louisville East End

A popular local breakfast chain is growing again in Louisville.

According to building plans filed with the Louisville Metro Government, Con Huevos is opening a new location at 2125 S. Hurstbourne Parkway in a former Panera Bread space. The restaurant does not yet have an opening date.

Con Huevos is a Mexican-Southern fusion breakfast restaurant owned by husband and wife duo Jesus Martinez and Izmene Peredo. The cafe serves dishes like huevos rancheros, poached huevos in chipotle with buttermilk cookies, breakfast tacos and burritos, churros, classic French toast and the very popular very leches Crepes. There are also lunch options, side dishes, and Cuban and Colombian-style coffees.

The first Con Huevos opened on Frankfort Avenue in 2016. A second location opened at Holiday Manor in 2018, followed by a take-out version called Con Huevos Craves inside the Omni Hotel’s Falls Market City in 2019.

Former Courier Journal food critic Lindsey McClave reviewed Con Huevos in 2016 and again in 2019 after the Frankfurt location tripled the size of its dining room. She called the restaurant “one of Louisville’s culinary gems.”
