Glaschu bosses to open new steak and seafood restaurant Gōst in city center
The owners of one of Glasgow’s best-loved Scottish restaurants are opening another restaurant in the city center this spring.
Taking over the former Viva Ristorante site on Bothwell Street, Gōst is a new all-day dining and bar space offering “delicious cuts of beef and expertly grilled fish” as well as quality cocktails and wine.
This is the latest opening from the team behind Glaschu and The Duke’s Umbrella gastropub. Chef John Molloy has concocted a mouth-watering menu including crab bisque shooter, roasted Orkney scallops and an out-of-this-world dish ex dairy prime rib.
Gōst uses purebred Angus beef and is one of the only restaurants in Scotland to use cuts from ex-dairy cattle removed to grass pastures for at least 12 months – with advanced age believed to create depth of “unparalleled” flavor.
The Angus beef used is selected from small, sustainable Scottish farms that graze the animals throughout the summer and use silage (a type of natural grass-based fodder) in the winter.
This natural process means that Gōst’s products are as environmentally friendly as possible and the animals are kept on their natural diet, improving well-being and the end product. Additionally, £2 from every sale of an Ex-British Dairy Cup will be donated to Cash for Kids.
Owner Andy McCartney said: “Glasgow loves fabulous steak, but unfortunately due to the pandemic many of the company’s favorite restaurants in the city center have closed. Our new town center restaurant and bar will provide an exceptional dining experience with the finest cuts from the best cows from the best farms in Scotland. All served in a beautiful setting.
“We are also delighted to have collaborated with Enotria & Co. who have organized a specialized and prestigious wine list that matches the quality of the products we use.”
Executive chef John Molloy continued: “We like to cook things that are familiar to people but elevated. With the quality of the products we use, we do just that. Although it speaks for itself, I will also speak for it, it’s amazing. The old British dairy beef is a revelation.

Vegans and vegetarians have not been forgotten – from charred sourdough squash soup with pumpkin seeds and chives, to stuffed mushroom and truffle risotto – there is something for everyone.
Gōst also offers an extensive wine list including Sancerre, Pouilly-Fuisse, Barolo and Saint-Emillion and cocktails such as the Salted Honey Old Fashioned.
